Recipe: Sweet Carrot Apple Kugel

A wonderful sweet addition to the Passover Seder…sort of tastes like carrot cake.

Makes 1 medium (2.5 pounds) casserole or 9 muffins.

INGREDIENTS

1/2 Cup melted margarine or butter.
1 Cup unpeeled grated Granny Apple (1 medium).
1 Cup peeled grated sweet potato (1 small potato)
1 Cup peeled grated carrot (2 medium)
1 Cup matzo meal
1 tsp. coarse salt
1 tsp. baking soda
1 tsp. cinnamon
¼ teaspoon grated nutmeg
½ cup sugar

DIRECTIONS

Combine melted margarine, apple, sweet potato, carrot, matzo meal, salt, baking soda, cinnamon, nutmeg, and sugar.
Stir to combine.
Divide into the baking pans or individual greased muffin cups.
Cover with foil or parchment paper.
Bake for 30 minutes at 325 degrees.
Increase temperature to 350 degrees, remove paper and continue baking until firm and dark golden brown - 5 to 10 minutes more.
Serve immediately.
